Red Wine is produced from crushed dark skinned grapes, which remain in contact with the grape skins - from which colour is extracted - during fermentation. The grapes used for red wine don't typically have a red flesh, the rare exceptions being teinturier grapes like alicante bouschet. A blended wine is one where the fermented juice of one variety is joined with that of another - or others. Blending can also encompass different vintages in such a way to ensure that they always taste the same. Strictly speaking, a single varietal is a wine made from one grape variety only. However rules change from region to region where a single varietal may contain a small amount of another variety. In Australia, 80% of the wine must come from the named variety whilst in the US - it is 75%. Cabernet Sauvignon is without doubt, the most cherished red grape variety in the World, acclaimed as the backbone behind the finest clarets of Bordeaux, and producer of the New World's finest singles varietals. In Australia, Cabernet Sauvignon is usually blended with Shiraz or Merlot - The Coonawarra Region is the most favoured spot for growing the variety. A vintage wine is one made from grapes that were all, or primarily, grown in a single specified year, and are accordingly dated as such. Variations in a wine's character from year to year can include subtle differences in colour, palate, nose, body and development. Good quality red wines in particular can improve in flavour with age if properly stored. Vintage wines are generally bottled in a single batch so that each bottle will have a similar taste.
